The trip

Washoku, traditional Japanese cuisine, is recognised by UNESCO as intangible cultural heritage, and it is a craft learned over years.

In Tokyo, students visit the Tsukiji Outer Market to see how fish reaches the table and join a hands-on sushi or ramen class. In Kyoto, Nishiki Market and a tea experience show how seasonality and presentation shape kaiseki and tea culture. In Osaka, known for its street food, students visit the Cup Noodles Museum and make their own instant noodles, tracing how a Japanese invention reached the world.
